It’s really better to NOT start this discussion again, it always bring to flame. You just need to know that GrapheneOS is a good product and developers are really good at their job in maintaining it. Mull + ublock on andvanced mode ftw. Mull is awesome, even if you need to change sometimes a thing or two from about:config (e.g. ocsp.require sadly broke a lot of websites), but the real feature is the ublock addon in advanced mode: if you learn how to use it (not hard, you can check the wiki on the official GitHub page or any guide on the internet) then you will have complete control on your traffic and a great protection against tracking and security issues. Tor is good too for everyday browsing, just use another browser for things that need an account

Nextcloud encryption isn’t perfect, and you will lose some functionality (e.g. image preview). You could think about encrypting only what you think is particularly sensible, with something like cryptomator

It’s not easy as you may think, if you use a VPN, a secure router and follow common security practices for nextcloud, SSH and the like. If someone can access your server with those thing in place you would have a lot more to worry. IMHO a selfhosted nextcloud works better without encryption, without high risks. Of course if your threat model call for it, encrypt whatever you need, but common users are going to lose too much for nearly no gain
