When you’re creating a sublemmy, if there was a checkbox for “create a matrix chatroom with the same name and description as this sublemmy”, would that be a good feature?

I’d be okay with this, but only if the matrix server is related to the Lemmy instance. Like, don’t create a channel on the main/official Matrix server…
